The 8th list of city-level Intangible Cultural Heritage (ICH) projects in Zhongshan was recently released, and "Huangpu Traditional Food Production Techniques" made the list.
Huangpu traditional food production techniques, which originated from the peasant class, have been famous since the early period of the Republic of China. Traditional food such as Guanjiawei Salted Mustard, Salty Chinese Sauerkraut, special local pastries, Bazhen Rice Vinegar, and traditional wines, all made with traditional techniques, are welcomed by local residents and people in the surrounding areas.
Specifically, Guanjiawei Salted Mustard is made by the farmers in Zhaofeng Village who introduced the mustard root to the sandy climate of Gaoji, using self-created manual drying, rubbing and curing techniques. During the Republic of China period, Guanjiawei Salted Mustard was mainly sold to Guangzhou, Hong Kong, Macao, and other places.
Huangpu Town is a famous town of history and culture in China. It was one of Zhongshan's three most famous towns in history featuring a robust agriculture, food processing and folk commercial trade.
