Leong Ngan, a Cantonese cuisine master born in Zhongshan, held an apprenticeship ceremony in Xiaolan Town on the evening of September 4 to officially accept 10 new apprentices, 3 of which are from Zhongshan and the other 7 are from Guangzhou, Dongguan and Zhaoqing. Currently, Leong has over 40 apprentices.
The 76-year-old has been engaged in the Cantonese cuisine industry in Macao for more than 60 years. He also plays an important role in promoting inter-regional exchanges of Cantonese cuisine and food culture between the Chinese mainland and Hong Kong. Leong Ngan is the president of the Macau Food Industry Trade Union, vice president of the Macao Cuisine Association, and a member of the Famous Chef Special Committee of the Chinese Cuisine Association.
Up to now, Zhongshan has built four provincial Cantonese cuisine chef training bases, four provincial Cantonese cuisine master studios and seven city-level Cantonese cuisine master studios. Statistics show that Zhongshan has provided training for over 10,000 persons and created more than 27,000 jobs through the Cantonese Cuisine Chef campaign.
